Spread about 2 tablespoons of pizza sauce in the middle of the tortilla, and then add some pepperoni slices and your mozzarella stick on top.
Roll up your tortilla, and then add toothpicks to hold it together.
Place your pizza tortillas into the air fryer basket, spray your tortillas with cooking spray, and sprinkle the Italian seasoning on top. Set the temperature to 380 degrees F, air fryer setting, for 3 to 5 minutes.

Notes
This recipe will work in any Air Fryer basket or oven model. This recipe will also work in the Ninja Foodi, Instant Pot Vortex, Secura Air Fryer, GoWise, and Instant Pot Crisp Lid. The cooking time will vary, but the recipe will remain the same.
Soak your toothpicks in water before adding them to the air fryer. Otherwise, they might burn.
I did not spray the air fryer, as my tortillas did not stick, but if you find that yours are, you can either spray your air fryer basket with cooking spray or line the basket with parchment paper using a reusable silicone liner.
Do not crowd the air fryer basket. Otherwise, the tortillas will not crisp up.
Spray your tortillas generously, and the cooking oil will help crisp up your tortillas.
