Ingredients 

Chicken:

  • 1 pound chicken breast, boneless skinless

Chicken Marinade:

  • 1 large egg
  • 1 cup milk, or buttermilk
  • 1/4 cup pickle juice

Chicken Breading:

  • 1 1/4 cup all-purpose flour
  • 2 tablespoons powdered sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Serving:

  • 24 mini slider rolls

Honey Glaze:

  • 1/2 cup honey
  • 4 tablespoons butter, unsalted and melted

Instructions

  • Cut the chicken into 1-inch pieces. Marinate the chicken: In a large bowl, combine milk, egg, and dill pickle juice. Place the thinly sliced chicken breast fillets in the mixture, ensuring they are fully coated. Let the chicken marinate for at least 30 minutes to tenderize and infuse it with flavor.
  • Preheat your air fryer to 400 degrees F (200°C) for 3-5 minutes to ensure it's hot and ready for cooking. Mix all-purpose flour, powdered sugar, salt, and pepper in a shallow dish. Stir well to combine the dry ingredients.
  • Remove the chicken bites from the marinade, allowing any excess liquid to drip off. Dredge each fillet in the flour mixture, pressing gently to adhere the coating to the chicken. Ensure both sides are fully coated.
  • Place the coated chicken fillets in the air fryer basket in a single layer. Cook them in the preheated air fryer for 8-10 minutes, flipping them halfway through the cooking time until they are golden brown and cooked.
  • While the chicken is cooking, split the mini slider rolls in half. Brush the insides of the rolls with melted butter and lightly toast them in the air fryer for 1-2 minutes until they become slightly crispy and golden.
  • Once the chicken is cooked, remove it from the air fryer. Place a chicken fillet on the bottom half of each toasted roll. Drizzle a small amount of honey over the chicken. Top with the remaining half of the rolls.
  • Arrange the Copycat Chick-Fil-A Chicken Minis on a platter and serve them warm.
