Description

What an easy breakfast, filled with ripe bananas and chocolate chunks; it’s a fantastic way to start breakfast.st.

Ingredients 

  • 1 banana, ripe, mashed
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/4 cup semi-sweet chocolate chips, or dark chocolate chunks

Instructions

  • In a medium-sized bowl, mash the banana, add vegetable oil, maple syrup, egg, and pure vanilla extract. Mix well.
  • Add the flour, baking soda, ground cinnamon, and salt. Mix well.
  • Fold in the chocolate chunks.
  • Spray the ramekin with nonstick cooking spray, then pour the batter in. Filling about 2/3 the way full. Then place into the air fryer basket for 12-15 minutes at 320 degrees F, air fryer setting.
  • Plate, serve, and enjoy!

Notes

Note: The exact time will depend on the air fryer you own and how thick the batter is in the ramekin. Check with a toothpick before removing it.
