This is such a great and easy recipe for homemade Blackstone Griddle Mojo Chicken Tacos. Griddled to perfection and then layered on the toppings for a great and easy summertime meal.
Ingredients
1poundchicken tenders
1cupmojo marinade
8regulartortillas, flour or corn
1cuppickled onions
1cupcabbage, shredded
1/2cupsalsa verde
Salt & Black Pepper To Taste
Instructions
Start by preheating the Blackstone on medium heat for a couple of minutes. Then toss your chicken tenders in about 1 to 2 tablespoons of olive oil. Season your chicken tenders with salt and black pepper.
Cook for about 4 to 5 minutes, flipping the chicken a few times during the cooking process. The exact time will depend on your big your chicken tenders are. Mine were bite-sized.
Toss with the mojo marinade and add back to the griddle for about a minute or two.
Heat the tortillas in the microwave or on the grill, and then pile on your toppings. I added up some pickled onions, shredded cabbage, and drizzle on some salsa verde on top.
