Ingredients 

  • 1 1/2 cups zucchini, Cut into 1-inch slices
  • 1 1/2 cups summer squash, Cut into 1-inch slices
  • 12 whole mushrooms, washed and stems removed
  • 24 grape tomatoes
  • 12 whole sweet peppers
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt

Instructions

  • Preheat your air fryer to the desired temperature. Generally, a temperature of around 375°F (190°C) works well for cooking vegetable kabobs.
  • Cut your desired vegetables into bite-sized pieces. Popular choices for kabobs include bell peppers, onions, zucchini, cherry tomatoes, mushrooms, and squash. You can also add other vegetables like broccoli, cauliflower, or asparagus.
  • Toss the vegetable pieces with olive oil, salt, pepper, and any desired herbs or spices. This helps to enhance the flavor of the vegetables.
  • Thread the seasoned vegetable pieces onto skewers, alternating different vegetables to create a colorful and appealing presentation. Soak wooden skewers in water for 10-15 minutes before using to prevent them from burning in the air fryer.
  • Place the vegetable kabobs in a single layer in the air fryer basket or on the air fryer tray, ensuring they are not overcrowded. This allows for proper air circulation and even cooking.
  • Cook the vegetable kabobs in the preheated air fryer for approximately 10-15 minutes, or until the vegetables are tender and slightly charred, turning them halfway through the cooking time for even browning.
