Ingredients 

  • 2 medium zucchini
  • 1 cup breadcrumbs (vegan-friendly)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1/2 paprika paprika
  • 1/2 cup flour (gluten-free alternative, if desired)
  • 1/2 cup non-dairy milk (almond milk, soy milk, etc.)

Instructions

  • Wash the zucchini and cut them into fry-like shapes, approximately 1/2-inch wide and 3-4 inches long. Pat them dry with a towel to remove excess moisture.
  • Combine the breadcrumbs, nutritional yeast, garlic powder, paprika, salt, and black pepper in a shallow bowl or dish. Mix well to distribute the seasonings evenly. Whisk together the flour and non-dairy milk in a separate bowl until you have a smooth batter. Adjust the consistency by adding more non-dairy milk if needed. The batter should be pourable but not too thin.
  • Take one zucchini fry at a time and dip it into the flour batter, ensuring it is fully coated. Allow any excess batter to drip off. Roll the zucchini fry in the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the surface. Place the coated fry on a plate or baking sheet and repeat the process with the remaining zucchini fries.
