Air Fryer Grilled Panzanella Salad

Description

This is one of my favorite recipes from my Grandmother; we would often have a quick Italian salad with almost every meal. While we would use stale bread, today, I toasted it up in the air fryer.

Ingredients 

  • 1 Baguette
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1  English or Persian Cucumbers
  • 1 tablespoon red wine vinegar
  • 1 cup pitted olives
  • 8 ounces grape tomatoes
  • 1/8 cup diced red onions
  • 1 teaspoon minced garlic

Instructions

  • Start by making the bread croutons. Cut the baguette in half, and then brush the bread with olive oil, salt, and black pepper. Set the bread into the air fryer for 4-5 minutes at 350 degrees F, air fryer setting. Just long enough that the bread is toasted.
  • While the bread is toasting up, make the vinegarette add the olive oil, red wine vinegar, minced garlic, salt, and black pepper, mix well.
  • Then when the bread is done, let it rest before you cut it up. Cut it up into about 1-inch pieces.
  • Cut the tomatoes in half, dice up the olives, slice the red onions, and cut the cucumber. In a large bowl, mix the tomatoes, olives, red onions, toss in the cut bread. Then drizzle with the homemade vinegarette.
  • Plate, serve, and enjoy!
