Start by adding the milk to a large saucepan, over low-medium heat, and let the milk cool until it's warm, about 100-110 degrees F. Mix in the honey and yeast, and let sit for 10-15 minutes until the yeast is activated and frothy.
Transfer the yeast mixture to a stand mixer or large bowl, slowly fold the melted butter, eggs, and salt, then mix well. Slowly add in the flour, 1 cup at a time, mixing after each addition of flour. Mix at medium speed until a dough has formed.
Knead the dough on a lightly floured surface for 5-7 minutes until it becomes smooth and elastic.
Place the dough in a greased bowl, cover it with a damp kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.
Punch the dough down and lightly sprinkle flour over the kitchen counter or cutting board. Divide the dough into two portions. Using a floured rolling pin, roll the dough out until the dough is about 1/2 inch thick.
Use a pizza cutter or sharp knife to cut the dough into equal-sized squares or rectangles.
Preheat the air fryer to 350 degrees F (190°C). Brush the rolls with melted butter and let them rise for 10-15 minutes. Place the rolls in the air fryer basket, leaving space between them. Cook for 5-7 minutes until the rolls are golden brown and fully cooked.
While the rolls cook, prepare the glaze by mixing the honey, powdered sugar, and vanilla extract in a small bowl. In another small bowl, mix the whipped butter and cinnamon. When the rolls are done, remove them from the air fryer and brush them with the glaze. Serve the rolls warm with a side of whipped cinnamon butter.
