Preheat the air fryer for 3-5 minutes at 370 degrees F using the air fryer setting or the preheat setting on your air fryer.
Divide your chicken into equal-sized portions, ideally about 4-6 ounces for each sandwich. Wrap the chicken breast into saran wrap and, using a meat mallet, pound them so they are thinner; even chicken breast will cook better in the air fryer than uneven chicken breasts.
In the first bowl, add the flour and seasonings. In the second bowl, crack your eggs, and using a fork, whisk the egg until they are frothy; mix in the hot sauce with the eggs if you are using.
Dip each chicken breast into the flour mixture, then into the beaten eggs, and finally coat again with the flour mixture.
As you coat the chicken, place the breaded chicken into the air fryer basket, lined with either parchment paper or sprayed with nonstick cooking spray. Place your chicken in the air fryer basket, leaving plenty of space around the chicken, and then spray the entire coating with cooking spray; this will help your batter crisp up.
Set the air fryer temperature to 370 degrees F, and air fry for 12-15 minutes, flipping the chicken halfway during the cooking process. When you flip the chicken, spray the coating again with cooking spray, or brush with olive oil.
Add your mayonnaise on top of the bottom bun, then add your fried chicken cutlet and top with assorted toppings.
