Description

Everyone loves cheesecake. However, everyone doesn’t like making it. Today I spent about 30 minutes from start to finish making a homemade blueberry cheesecake, and my family loves it.

Ingredients

Graham Cracker Crust:

  • 3 cups graham crackers , crushed
  • 1/4 cup granulated sugar
  • 3/4 cup butter, melted

Blueberry Cheesecake Filling:

  • 1 1/4 cup heavy cream
  • 24 ounces cream cheese, room temperature
  • 1/4 cup granulated sugar
  • 2 tablespoons powdered sugar
  • 1/4 cup sour cream
  • 1 tablespoon vanilla extract
  • 21 ounces blueberry pie filling

Instructions

  • In a large mixing bowl, mix together the graham crackers, melted butter, and sugar. Mix well.
  • Add about a cup of graham cracker crust and use your hands to pat it down. Continue to add the graham cracker crust, until the bottom is all filled. Then pat the crust down, so it’s fully packed.
  • Set in the air fryer at 300 degrees F (air fryer setting) for 10 minutes. As soon as the edges start browning, remove them. And let it cool. It needs to be completely cool before you add any filling.
  • When the crust is cooled. Add the heavy cream, cream cheese, sugar, powdered sugar, sour cream, and vanilla to a large mixing bowl. Mix until peaks form.
  • Spoon onto the graham cracker crust. Make sure that it’s leveled, as you spoon the filling in, then scoop the blueberry pie filling on top.
  • Place in the refrigerator until serving time.
  • Plate, serve, and enjoy!

Equipment

  • Air Fryer
  • Baking Pan
  • Cooking Spray
