Description

Air Fryer Grilled Chicken Caesar Salad is amazing! If you are looking for a healthy lunch or dinner option, this is one of my favorites.

Ingredients 

Chicken:

  • 1 large chicken breast, skinless, boneless
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Salad:

  • 6 cups Romaine lettuce leaves, washed and dried
  • 1 cup grape tomatoes, halved
  • 1 avocado, chopped
  • 1/2 cup Parmesan cheese, shredded
  • 1 cup croutons

Dressing:

  • 1/2 cup Caesar dressing, store-bought or homemade

Instructions

  • Brush the olive oil over the chicken, and then season the chicken with salt, black pepper, garlic powder, onion powder, and chili powder.
  • Preheat the air fryer to 380 degrees F, air fryer setting, and then place your chicken into the basket, set the timer to 5 minutes, flip your chicken, and air fry for another 5 to 8 minutes, or until the internal temperature of the chicken reaches 165 degrees F.
  • Remove the chicken from the air fryer basket, and let cool slightly, before slicing.
  • In a large bowl, combine lettuce with the avocado, tomatoes, parmesan cheese, and dressing, then toss to coat. Top with the chicken. 
  • Pour over the additional dressing, then top with the croutons and more cheese, if desired.
  • Plate, serve, and enjoy!

Notes

Homemade Caesar Dressing:
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Dijon Mustard
  • 5-10 capers
  • 1 egg
  • 2 anchovy fillets
  • 1/2 cup olive oil
  • 1/4 cup grated Paresman Cheese
  • salt & pepper to taste
