Start by using a mallet, and flatten the chicken breast until about 1/8 inch thick. Season the chicken breast with salt and pepper.
Then place a slice of prosciutto on top of the breast, followed by a piece of provolone cheese. On top of the cheese, place about 3-5 asparagus spears.
Roll up the breast, and I used twine to hold it together.
In one bowl, place the flour. In another bowl, whisk the eggs, and in the last bowl, combine the panko and grated parmesan cheese.
Dip the rolled chicken breast into the flour, coating all sides, then dip it in the egg mixture, and finally cover it with the panko/Parmesan cheese.
As you coat them place them on a greased air fryer tray or in a greased air fryer basket.
Spray generously with olive oil spray.
Air fry for 7 minutes, at 370 degrees F, then flip and spray again, and air fry for another 7 minutes.
Check the internal temperature, which should be 165 degrees F before removing.
Plate, serve, and enjoy!
