In a small mixing bowl, crack the eggs, add the milk, salt, and pepper.
Whisk the eggs, milk, salt, and pepper together.
Add a tablespoon of butter to a small skillet, turn the burner to a simmer, melt the butter partially, and add the egg mixture. Keep on moving the eggs with a spatula until they are cooked.
Place a tortilla shell on the bottom of a greased air fryer tray or a greased air fryer basket (both sprayed with olive oil)
Add a couple of tablespoons of scrambled eggs on top of the tortilla.
Sprinkle the shredded cheddar on top of the scrambled eggs.
Add another tortilla on top, and press down, place in the air fryer for about 4-5 minutes at 320 degrees F. (air fryer setting)
Plate, serve, and enjoy!
