Air Fryer Breakfast Quesadilla

Description

This is such a quick breakfast. My kids absolutely love these, and one of the best things is that you can fill them with anything you want. Today, I used scrambled eggs and cheddar cheese. But use whatever you have on hand. I was thinking of changing out next time to a Western Omelet.

Ingredients 

  • 4 large eggs
  • 2 tablespoons milk
  • 1 teaspoon kosher salt
  • 4 tortillas, either corn or flour
  • 1/2 cup cheddar cheese, shredded

Other: additional shredded cheddar cheese, sour cream, salsa, guacamole, etc.

    Instructions

    • In a small mixing bowl, crack the eggs, add the milk, salt, and pepper.
    • Whisk the eggs, milk, salt, and pepper together.
    • Add a tablespoon of butter to a small skillet, turn the burner to a simmer, melt the butter partially, and add the egg mixture. Keep on moving the eggs with a spatula until they are cooked.
    • Place a tortilla shell on the bottom of a greased air fryer tray or a greased air fryer basket (both sprayed with olive oil)
    • Add a couple of tablespoons of scrambled eggs on top of the tortilla.
    • Sprinkle the shredded cheddar on top of the scrambled eggs.
    • Add another tortilla on top, and press down, place in the air fryer for about 4-5 minutes at 320 degrees F. (air fryer setting)
    • Plate, serve, and enjoy!
