Description

Instant Pot Pork Fried Rice -- I recently made this fantastic rice dish for my family, for pork fried rice! This recipe is easy and quick, taking about 20 minutes from start to finish. This dish can be served as an entree or as part of a larger mea.

Ingredients 

  • 1 tablespoon sesame oil
  • 1 pound pork, cut into 1-inch pieces
  • 1 teaspoon ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup onion, peeled and diced
  • 2 tablespoons garlic, minced
  • 2 large eggs
  • 1 cup Jasmine rice
  • 1/4 cup soy sauce
  • 1 1/2 cup chicken broth
  • 1/2 cup frozen mixed vegetables, (thawed)

Instructions

  • Start by pressing the saute' button and then add the oil. Please wait for the oil to heat up, add the pork, and then saute until it's browned.
  • **Remember to continue to move the pork while it's sauteing; otherwise, it will burn or stick.
  • Then once the pork is cooked, set it aside.
  • Then add the olive oil, and saute the onions and garlic. Saute' until the onions are softened, about 4 minutes.
  • Then add the eggs, rice, soy sauce, and broth, and mix well.
  • Use the rice setting and set the time for 12 minutes. If you do not have the rice feature, just put it for manual high pressure for 12 minutes.
  • When the timer beeps, do a quick release.
  • Then, open up the lid, mix well, add back the pork and pour into the thawed vegetables. Then press saute' again, and heat for about 2-3 minutes, until the vegetables are soft and everything is hot. Mix well.
  • Plate, serve, and enjoy!
