Description

I love raspberries, my husband had a bunch of plants growing up, and there is nothing like picking fresh raspberries off the vine and eating them. My kids recently went raspberry picking, and I am in love with a slice of quick bread, while I drink my coffee in the mornings. So, I came up with this, I hope you and your family enjoy, as much as mine does.

Ingredients 

  • 1 cup sugar
  • 1/2 cup butter, unsalted, room temperature
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup sour cream
  • 4 tablespoons milk
  • 1 1/2 cups raspberries, fresh or frozen

Instructions

  • Start by spraying your loaf pan with olive oil spray.
  • In a small mixing bowl, cream the butter and sugar
  • Then mix in the eggs and vanilla extract and mix again.
  • Mix in the flour, baking powder, salt, sour cream, and milk.
  • Mix well, then fold in the raspberries.
  • Pour the batter into the loaf pan, about 2/3 the way full
  • Set in the air fryer basket or tray for 12 minutes at 330 degrees F. (air fryer setting)
  • Check your bread if it’s fully cooked. I put a toothpick in the center of the bread.
  • The exact time is going to depend on your air fryer and what pans you made it in. Obviously, the larger pans will need more time.
  • Just continue to air fry in 5-minute intervals until the toothpick comes out clean.
  • Plate, serve, and enjoy!
