Ingredients 

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup cranberries, diced
  • 1/2 cup walnuts, diced
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 3/4 cup orange juice

Instructions

  • In a large mixing bowl, mix the flour, sugar, salt, baking powder, and baking soda.
  • In another mixing bowl, mix the egg, vegetable oil, and orange juice.
  • Fold the egg mixture into the dry mixture.
  • Fold in the diced cranberries and walnuts.
  • Spray a loaf pan with non-stick cooking spray.
  • Pour the batter into the prepared pan, filling about 2/3 way full.
  • Set the pan into the air fryer.
  • Set the temperature to 320 degrees F for 20-30 minutes.
  • Place a toothpick in the center of the cranberry bread. If the toothpick comes out clean, it is done. If not, add another few minutes.
  • Let cool before slicing.
  • Plate, serve, and enjoy!
