Air Fryer Gluten-Free Pumpkin Banana Nut Bread -- This is one of my family/s favorite bread made with oats, pumpkin, banana, and pecans. This Gluten-Free bread will soon be one of your favorite breakfasts that you make in your Air Fryer!
Ingredients
2ripebananas
1cupcanned pumpkin
1/2cuppure maple syrup
2largeeggs
2cupsgluten-free oats (old-fashioned oats)
1teaspoonpure vanilla extract
1teaspoonground cinnamon
1teaspoonground nutmeg
1teaspoonbaking soda
1teaspoonsalt
1/2cuppecans, diced or walnuts
Icing:
1cuppowdered sugar
2-3tablespoonsmilk, or water
Instructions
Start by adding all of the ingredients to either a blender or food processor and blend until smooth.
Pour the batter into a bowl, and mix well. Next, spray your loaf pan with cooking spray, and pour the batter into the mini loaf pan.
Place the pan into the Air Freyr Basket, set the temperature to 320 degrees F, air fryer setting, and cook for 12 to 15 minutes. Or until a toothpick placed into the center comes out clean.
Let cool slightly before adding the icing.
Drizzle the icing over the bread, and let set for a couple of minutes.
