Description

These are very easy breakfasts to make. This is great you have a real homemade taste in your mouth in a matter of minutes. My kids absolutely loved this, and I served it with a drizzle of confectionary sugar icing! I gave you two recipes, one for a homemade blueberry scone and another recipe for using Jiffy Mix for making blueberry scones.

Ingredients 

Blueberry Scone Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 cup butter, cold, unsalted
  • 1 large egg
  • 1/3 cup milk
  • 3/4 cup blueberries, fresh

Vanilla Icing:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat your air fryer to 350 degrees F (175°C). If your air fryer requires preheating, follow the manufacturer's instructions. Line the air fryer basket with parchment paper for easy cleanup.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • In a separate large mixing bowl, whisk together the heavy cream, egg, and vanilla extract.
  • Pour the wet ingredients into the dry mixture. Gently fold until just combined. Be careful not to overmix.
  • Gently fold in the fresh blueberries, careful not to burst them.
  • On a lightly floured surface, shape the dough into a 6-inch circle about 1 inch thick. Cut into 8 equal separate wedges.
  • Place scones in the air fryer basket, ensuring they are not touching. You may need to cook them in batches depending on the size of your air fryer.
  • Lightly brush top of dough with a bit more heavy cream. This will help them brown nicely.
  • Set cook time for 15-20 minutes until golden brown and a toothpick inserted into the center comes out clean.
  • Cool the scones on a wire rack for a few minutes before serving. This allows them to set and makes them easier to handle.
  • Drizzle the icing over the top of the scones.
