Line the springform pan with parchment paper in the bottom of the pan, and spray the sides of the pan with nonstick cooking spray or grease with melted butter.
In a food processor, add the chocolate chip cookies or oreo cookies, and pulse until the cookies are fine crumbs. Add the crushed cookies to a large bowl, and pour in the melted butter; mix well.
Spread the crust into the bottom of the prepared springform pan, press the cookies into the bottom of the pan, and press firmly.
In a microwave-safe bowl, melt the chocolate, cooking at 30-second intervals, mixing in between the intervals, mix until smooth. Add the cream cheese, powdered sugar, cornstarch, eggs, and vanilla to a medium bowl, then slowly fold the melted chocolate.
Slowly pour the filling over the crust, and use a spatula or metal spoon to smooth the batter
Set the cheesecake into the air fryer basket and bake cheesecake at a cooking time of 10-12 minutes at 300 degrees f, using the air fryer setting. When the cheesecake is set, carefully remove it from the basket of the air fryer, let the cheesecake cool for an hour, then refrigerate for 6-8 hours until set.
