Description

If you’re looking for a warm and comforting meal that is easy to make, look no further than this flavorful 4 ingredient potato soup.

Ingredients 

  • 3 pounds Russet potatoes, peeled and diced
  • 2 cups milk, whole, skim or 2%
  • 12 stalks green onions, sliced
  • 1 teaspoon garlic salt

Instructions

  • Peel the potatoes, and then cut them into 1-inch pieces; the potatoes will cook faster if they are.
  • Fill a large stockpot or large pot with cold water over medium-low heat, and boil when you have boiling water, add your diced potatoes to the bring to a boil, and then simmer over medium-high heat for 15-20 minutes until the potatoes are fork tender.
  • Drain the potatoes, leaving about half a cup of water; the potato starch will help thicken the soup.
  • Add the milk and garlic salt to the large dutch oven, and use a potato masher to mash the chunks. Depending on how thick you want your soup, you can also use an immersion blender. Continue to simmer on medium heat for 5-7 minutes.
  • Serve with sliced green onions.
