Description

Air Fryer Blueberry Pancake Muffins Poppers are amazing! These make for a quick and easy breakfast! And who doesn't love pancakes?

Ingredients 

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 2 1/2 cups buttermilk
  • 2 large eggs, 1
  • 1 tablespoon vanilla extract
  • 4 tablespoons melted butter
  • 1/2 cup fresh blueberries

Instructions

  • Start by adding the flour, baking powder, sugar, and salt to a mixing bowl and mix well.
  • Then mix in eh buttermilk, eggs, vanilla extract, and melted butter.
  • Mix well.
  • Spray your muffin tins with non-stick cooking spray or olive oil spray.
  • Pour your muffin mixture into the prepared muffin tins.
  • Add a few blueberries on top.
  • Set the temperature to 320 degrees F for 8 to 12 minutes, air fryer setting.
  • Check them when they come out, mine were fully cooked, so I removed the muffin tins and placed them on the counter to cool slightly. If yours are not cooked (remember every air fryer is different), add a few more minutes.
  • Plate, serve and enjoy!
