Ingredients 

  • 1 pound white fish, any type
  • 1/2 cup mayonnaise
  • 2 cups pork rind, ground
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Kosher salt, optional
  • 1 teaspoon black pepper, optional
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika, optional

Instructions

  • In the first bowl add the mayonnaise, garlic powder, paprika, salt, and black pepper, in the second bowl, add the crushed pork rinds and grated parmesan cheese.
  • Using a sharp knife, cut your fish into stick-sized pieces. Depending on the size of the fish cutlets you are using. Dry the fish with a paper towel, this will help the batter adhere to the fish. 
  • Dip the fish into the mayonnaise mixture, then into the pork rind mixture. Use your hands to pat the breading onto the fish sticks. 
  • Spray your air fryer basket with cooking spray, then add your breaded fish sticks, and spray the fish sticks with cooking spray. 
  • Set the temperature to 380 degrees F, and set the cooking time for 12-14 minutes, flipping and spraying the fish, at the halfway point.

Keto Air Fryer Fish Sticks - Storage Instructions

Refrigeration:
  1. Allow the fish sticks to cool to room temperature.
  2. Place the fish sticks in a single layer in an airtight container, using parchment paper between layers to prevent sticking.
  3. Refrigerate for up to 3 days.
Freezing:
  1. To freeze, lay the cooled fish sticks on a parchment-lined tray in a single layer.
  2. Place the tray in the freezer for 2-3 hours or until fish sticks are frozen solid.
  3. Transfer the frozen fish sticks to a freezer bag, squeezing out as much air as possible before sealing.
  4. Store in the freezer for up to 2 months.
Reheating:
  1. From Refrigeration: Preheat the air fryer to 375°F (190°C). Place fish sticks in a single layer in the basket and cook for 3-4 minutes, or until heated through and crispy.
  2. From Freezer: Preheat the air fryer to 375°F (190°C). Cook frozen fish sticks for 6-8 minutes, flipping halfway, or until heated through and crispy.
Note: Avoid microwaving as this can make the fish sticks soggy. Always reheat in the air fryer to maintain crispiness.
