Ingredients 

Chicken Stir Fry:

  • 1 pound chicken , diced
  • 1 teaspoon ginger, minced
  • 1/2 head cabbage, red or green
  • 1 cup broccoli florets
  • 1 large orange bell pepper, sliced
  • 1/4 cup roasted cashews

Sauce:

  • 2 tablespoons peanut butter
  • 1/3 cup tamari
  • 2 tablespoons granulated sugar
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoons chili-garlic sauce

Instructions

  • Pour the stir fry into the air fryer basket, set the temperature to 390 degrees F, and cook for 5 to 8 minutes, shaking the basket frequently. Remove when the chicken is fully cooked.

How To Make The Sauce:

  • Add all the ingredients for the sauce to a large skillet or wok and stir to combine. Bring to a boil over medium-high heat and immediately reduce heat to just below medium. Simmer, stirring frequently, until the peanut butter is completely melted, and the sauce is reduced by one-half, approximately 5-6 minutes. Transfer sauce to a bowl and set aside.
  • When the chicken and vegetables are fully cooked, toss them with the sauce.
