Ingredients 

  • 2 cup mashed potatoes, cold
  • 1 large egg
  • 1/4 cup shredded cheddar cheese
  • 3 pieces bacon crumbled (cooked) or 1/4 cup bacon bits
  • 1 large green onion, sliced
  • Egg Roll Wrappers
  • Dipping Sauce: Sour Cream, Ranch, etc.

Instructions

  • In a medium-sized bowl, add your cold mashed potatoes, shredded cheese, diced scallions, bacon crumbles or bacon bits, and egg, mix well.
  • Layout an egg roll wrapper and then add about 2 tablespoons of filling inside of it. Using a pastry brush or your finger, brush the edges with water. Then roll up the egg roll, brush some water on the edges, and seal the egg roll.
  • Spray your air fryer basket with cooking spray, and then place your egg rolls into the basket, careful not to crowd the basket. Set the temperature to 340 degrees F for 8-10 minutes. (air fryer setting)
  • Plate, serve, and enjoy!
