Ingredients 

  • 3 large sweet potatoes, diced
  • 1 large onion, diced
  • 1 large bell pepper, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon thyme

Instructions

  • Wash and dry the sweet potatoes.
  • Start by cutting the sweet potatoes into uniform shapes, about 1/2 inch pieces.
  • Then cut the onions, and bell peppers, into 1/2 inch pieces.
  • Pour all ingredients into a large mixing bowl, mix well, and make sure that the potatoes are well coated.
  • Pour into the air fryer basket.
  • Set the temperature to 350 degrees F, air fryer setting, and set the time or 15 minutes. Shake the basket several times during the cooking process.
  • Check for fork-tender before removing the potatoes. If they need a few more minutes, add it. As soon as they are fork-tender, remove.
  • Plate, serve, and enjoy!
