Description

This light and moist cake is filled with a great lemon flavor that includes lemon curd, lemon zest, and lemon juice for a moist and flavorful cake.

Ingredients 

  • 8 tablespoons all-purpose flour
  • 4 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons lemon juice
  • 1/2 cup milk
  • 4 tablespoons vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon lemon zest
  • 4 teaspoons lemon curd

Instructions

  • In a small bowl, mix the flour, sugar, baking powder, salt, lemon juice, milk, vegetable oil, and vanilla extract. Mix in the lemon curd and lemon zest.
  • Spray your ramekin or mug with cooking spray, pour the batter in and set into the air fryer at 350 degrees F. for 6-12 minutes.
  • Let cool slightly before adding the whipped cream, garnish with some lemon zest.
