This is a great and easy breakfast, today I made a simple, Air Fryer Mug Pumpkin Coffee Cake. And it was amazing!
Ingredients
Coffee Cake:
2tablespoonsbutter, room temperature, unsalted
4tablespoonsgranulated sugar
4tablespoonspumpkin puree
1teaspoonpure vanilla extract
1/2cupall-purpose flour
1/4teaspoonbaking powder
1/4teaspoonsalt, omit if using salted butter
1/4teaspoonpumpkin pie spice
1/4teaspoonground nutmeg
1/4teaspoonground cloves
Topping:
2tablespoonsbutter, unsalted and cold
4tablespoonsall-purpose flour
2tablespoonsbrown sugar
Instructions
In a small mixing bowl, cream the butter and sugar.
Add the pumpkin puree, pure vanilla extract, and mix well.
Add the flour, baking powder, and spices, mix well.
Pour the batter into a greased ramekin. Then in a small bowl, make the streusel topping. In a small bowl, mix the butter, flour, and brown sugar, scoop on top of the coffee cake batter.
Set the ramekin or mug into the air fryer basket for 10-12 minutes at 320 degrees F, air fryer setting. Check halfway since the actual time will depend on how thick your mug is.
