Separate the egg roll wrappers and layer 4-5 pieces of pepperoni and some mozzarella cheese in the middle of each wrapper, leaving a little bit of space around all the sides (be careful not to overfill so you can still roll the wrapper without the pepperoni and cheese falling out).
Fill a small bowl with water and dip your finger in water and then run around the edges of the wrapper.
Fold the bottom corner of the egg roll up, then fold in the two sides.
Next, roll as tightly as you can and seal the egg roll shut with the last corner.
Repeat with all of the egg rolls.
Coat the inside of the air fryer with cooking spray and place a single layer of pizza rolls inside.
Spray the tops of the pizza rolls with cooking spray and then air fry for 10-12 minutes at 300 degrees Fahrenheit.
While they are cooking, combine the butter, parsley, salt, and ground black pepper in a large bowl.
Once the pizza rolls are cooked, coat the rolls with the garlic butter mixture (I just use a spatula to smear the butter across the tops and let it melt).
Serve with a side of pizza sauce to dip in and enjoy!
