Instant Pot Chicken Ramen – If you're like me, you love ramen but hate having to wait a long time for it to cook. And if you're also like me, you don't always have the time or patience to wait for it. That's where the Instant Pot comes in. I can have my ramen fixed in minutes without sacrificing any flavors with this fantastic device. Try this easy chicken ramen recipe and see for yourself!

Ingredients 

  • 1 pound chicken breast, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 4 cups chicken broth
  • 2 cups water
  • 3 packages ramen noodles, without the seasoning mix
  • 8 ounces bok choy
  • 4 large scallions
  • 1 teaspoon soy sauce
  • 1 tablespoon chili oil
  • 4 large hard-boiled eggs

Instructions

  • Start by seasoning your chicken with salt and black pepper. Add the vegetable oil to the Instant Pot, and press the saute button. Wait about 30 seconds, and then add your seasoned chicken. 
  • Saute your chicken until it’s fully browned.
  • Add the chicken broth, water, and the white part of the scallions, add your lid to the Instant Pot, and set the manual high pressure for 10 minutes. When the time is up, do a quick release. 
  • Remove the lid, and add the ramen noodles, bok choy, scallion tops, soy sauce, and chili oil. Press the saute button, and cook for another 2 to 4 minutes, or until the noodles are softened.
  • hard-boiled or soft-boiled eggs.
