Ingredients 

Almond Paste Filling:

  • 2 cups almond flour
  • 1 cup powdered sugar, plus more for dusting
  • 1/4 cup water
  • 1 large egg
  • 1 tablespoon almond extract
  • 1/4 teaspoon salt

Croissants:

  • 6 large croissants, sliced horizontally
  • 1/4 cup granulated sugar
  • 1/4 cup hot water
  • 1 teaspoon vanilla bean paste
  • 1/2 cup sliced almonds, for the top

Instructions

  • Preheat the air fryer to 270° F
  • Mix together all of the ingredients for the almond paste filling and set aside for now.
  • Mix the sugar, hot water and vanilla until the sugar dissolves.

  • Spread the bottom halves of the croissants with the almond paste filling. You will use about 2 Tablespoons of filling for each croissant bottom.  Cooks Tip: dip your offset spatula in water to help spread the filling more easily.
  • Place the top of the croissants on the bottom halves and brush the tops with more syrup.
  • Spread about 2 Tablespoons of the remaining almond paste filling on the tops of the croissants and sprinkle with the sliced almonds, pressing them lightly into the paste so they don’t fall off after baking. baking.
  • Place the croissants in the preheated basket and bake at 270°F for 15-18 minutes, or until the croissants are a deep golden brown.
  • Sprinkle more powdered sugar on top of the croissants as soon as you remove them from the air fryer.
  • Let the croissants cool for about 10 minutes before eating. The filling will be hot.
