Description

If you love blueberry muffins, you will LOVE this Air Fryer Blueberry Muffin Mug Cake! It is so easy to make and only takes a few minutes. Plus, it is healthier than traditional blueberry muffins because there is no added oil or butter. You will be surprised at how delicious it is! Give it a try and let me know what you think!

Ingredients 

  • 1/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 cup milk
  • 2 tablespoons butter, melted and unsalted
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup fresh blueberries
  • 1 teaspoon sparkling sugar, optional

Instructions

  • Mix the flour, sugar, and baking powder in a medium-sized bowl.
  • Pour in the milk and melted butter, vanilla extract, and mix well. Fold in the blueberries.
  • Spray your ramekins with cooking spray, then pour the batter into the ramekins, filling about 2/3 the way full. If you are using sparkling sugar, sprinkle some on top.
  • Place the ramekins into the air fryer at 320 degrees F, air fryer setting for 6-8 minutes.
  • Plate, serve, and enjoy!
