Prepare the air fryer tray with a fitted parchment paper sheet.
In a large bowl, mix together the egg yolks, ⅓ cup sugar, and salt until creamy. Stir in the flour, vanilla and cornstarch. Set aside.
Add egg whites and cream of tartar to a separate large bowl and mix with an electric or stand mixer until peaks form.
Add in ⅓ cup of sugar and mix until incorporated and stiff peaks form.
Fold in half of the whipped egg whites into the egg flour mixture until just incorporated.
Add in the remaining egg white mixture until combined, avoid overmixing.
Spoon mixture into a piping bag with a 1 inch tip.
Working in batches, pipe 1 inch thick and 3-4 inch long strips onto the parchment paper in the air fryer, leaving 2 inches of space between each ladyfinger.
Select the air fryer at 340 degrees and cook for 5-7 minutes, or until the ladyfingers are cooked through and lightly golden.
Sprinkle with confectioners sugar and serve, or use in tiramisu. Enjoy!
