Start by air frying your eggplant. Preheat your air fryer to 350 degrees F, air fryer setting, for 4 minutes. Then slice your eggplant into thin slices, sprinkle some salt on top of them, let them sit for 10 minutes.
Place them into the air fryer basket, brush the eggplant with olive oil. Air fry at 350 degrees F, air fryer setting, for 6 to 8 minutes, or until tender.
Remove from the air fryer, and add a slice of mozzarella, tomato slice, oregano, and basil on top. Roll up, and place into a baking pan, seam side down, and air fry for another 5 to 6 minutes at 330 degrees F, air fryer setting, until the cheese has melted.
Serve with tomato sauce, and Parmesan cheese.
