Description

Make soft and chewy Tim Hortons Peanut Butter Cookies at home with this simple copycat recipe. Perfect for snacking or pairing with coffee.

Ingredients 

  • 1 cup Peanut butter, smooth or chunky
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar, packed
  • 1 large Egg
  • 1 cup All-purpose flour
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  • In a large bowl, combine 1 cup Peanut butter, 1/2 cup Granulated sugar , 1/2 cup Brown sugar, 1 large Egg, and 1 teaspoon Vanilla extract until smooth.
  • Stir in 1 cup All-purpose flour 1/2 teaspoon Baking soda, and 1/4 teaspoon Salt until fully incorporated. Avoid overmixing.
  • Scoop dough into 1–2 tablespoon portions and roll into balls. Place on the prepared baking sheet about 2 inches apart. Press each cookie lightly with a fork to create a crisscross pattern.
  • Bake for 10–12 minutes, or until edges are lightly golden. Remove from oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Enjoy warm cookies fresh from the oven or store them in an airtight container for later. Perfect with a cup of coffee or milk.
