Ingredients
1cupPeanut butter, smooth or chunky
1/2cupGranulated sugar
1/2cupBrown sugar, packed
1largeEgg
1cupAll-purpose flour
1/2teaspoonBaking soda
1/4teaspoonSalt
1teaspoonVanilla extract
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
In a large bowl, combine 1 cup Peanut butter, 1/2 cup Granulated sugar , 1/2 cup Brown sugar, 1 large Egg, and 1 teaspoon Vanilla extract until smooth.
Stir in 1 cup All-purpose flour 1/2 teaspoon Baking soda, and 1/4 teaspoon Salt until fully incorporated. Avoid overmixing.
Scoop dough into 1–2 tablespoon portions and roll into balls. Place on the prepared baking sheet about 2 inches apart. Press each cookie lightly with a fork to create a crisscross pattern.
Bake for 10–12 minutes, or until edges are lightly golden. Remove from oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
