Make soft, tender, and juicy
Tim Hortons-style blueberry muffins
at home. Easy, sweet, and bursting with blueberries for breakfast or snack time.
Ingredients
1 ½
cups
all-purpose flour
½
cup
granulated sugar
2
teaspoons
baking powder
¼
teaspoon
salt
½
cup
milk
¼
cup
unsalted butter
,
melted
1
large
egg
1
teaspoon
vanilla extract
1
cup
blueberries
,
or frozen blueberries
Optional topping: 2 tablespoons sugar for a light crunch
Instructions
In a large bowl, combine
1 ½ cups all-purpose flour
,
½ cup granulated sugar
,
2 teaspoons baking powder
, and
¼ teaspoon salt
In another bowl, whisk together
½ cup milk
,
¼ cup unsalted butter
,
1 large egg
and
1 teaspoon vanilla extract
until smooth.
Add the wet ingredients to the dry ingredients and stir gently until just combined. Avoid overmixing.
Carefully fold in
1 cup blueberries
to distribute evenly without breaking them.
Line muffin cups and spoon batter evenly into 6 cups.
Optional topping: 2 tablespoons sugar for a light crunch
Bake the muffins for
18–22 minutes
at 375°F (190°C), or until a toothpick inserted in the center comes out clean.
