Taco Bell Enchirito (Air Fryer Copycat)

Description

A copycat Taco Bell Enchirito made in the air fryer — seasoned beef and refried beans rolled in a flour tortilla, crisped, then smothered in red sauce, cheddar, and the black olives the original had.

Ingredients 

For the filling

  • 1 lb ground beef, 85/15
  • 1 small white onion, diced (divided)
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 tablespoon all-purpose flour
  • ¼ cup water
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 16 oz refried beans

For assembly

  • 6 large flour tortillas, 8-inch
  • 2 cups sharp cheddar cheese, shredded (divided)
  • cups red enchilada sauce
  • 2.25 ounces black olives, sliced and drained
  • Cooking spray

Optional toppings: sour cream, diced tomato, shredded lettuce

Instructions

  • Brown the ground beef with half the diced onion and the garlic over medium heat, breaking it up finely. Drain the grease.
  • Stir in the taco seasoning, flour, salt, pepper, and water. Simmer 3–4 minutes until thickened. Set aside.
  • Warm the refried beans until smooth and spreadable.
  • Preheat the air fryer to 350°F for 3–5 minutes.
  • Warm the tortillas 15 seconds. Spread 3 tablespoons of beans down the center of each, top with beef, a pinch of onion, and 1 tablespoon of cheese. Roll burrito-style with both ends tucked in.
  • Spray the outsides with cooking spray. Place seam side down in a single layer in the basket. Air fry 5–7 minutes at 350°F, flipping once halfway, until golden.
  • Transfer to a plate. Spoon enchilada sauce over the top and cover with the remaining cheese.
  • Return to the air fryer 1–2 minutes until the cheese melts.
  • Top with the remaining diced onion and the sliced black olives. Serve immediately.

Notes

  • Do not sauce before air frying — the tortillas will steam instead of crisping.
  • Freeze unsauced after a 4-minute air fry; sauce fresh on reheating.
  • For the oven: 400°F for 12 minutes, sauce and cheese, then 8–10 minutes more.
