Slow Cooker Turkey White Bean Chili

Description

Creamy, cozy, and almost entirely hands-off — tender turkey, three kinds of white beans, green chiles, and salsa verde slow-cooked into the best white chili you'll make all winter.

Ingredients 

  • 1 tablespoon olive oil
  • 1 pound ground turkey, 93/7
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • teaspoons ground cumin
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 1 poblano pepper, seeded and diced
  • 30 ounces cannellini beans, drained and rinsed
  • 15 ounces great northern beans, drained and rinsed
  • 8 ounces green chiles, diced
  • 1 cup salsa verde
  • 4 cups chicken broth, or turkey broth
  • teaspoons kosher salt, plus more to taste
  • ½ teaspoon black pepper
  • 4 ounces cream cheese, softened and cubed
  • ½ cup sour cream
  • 2 tablespoons fresh lime juice, about 1 lime
  • ¼ cup chopped fresh cilantro

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and onion and cook, breaking the meat into crumbles, for 6 to 8 minutes until no pink remains.
  • Add the garlic, cumin, oregano, chili powder, and smoked paprika. Stir for 45 seconds until fragrant.
  • Transfer the mixture to a 6-quart slow cooker. Add the poblano, cannellini beans, great northern beans, green chiles, salsa verde, broth, salt, and pepper. Stir to combine.
  • Cover and cook on LOW for 6 hours or HIGH for 3 hours, until the poblano is tender.
  • Press about 1 cup of the beans against the side of the slow cooker with a wooden spoon to thicken the chili, then stir.
  • Add the cubed cream cheese, cover, and let sit for 20 minutes. Whisk until smooth.
  • Stir in the sour cream, lime juice, and cilantro. Taste and adjust salt. Serve hot with your favorite toppings.

Notes

  • Leftover turkey: Skip step 1. Sauté the onion, garlic, and spices alone, then stir 3 cups of shredded cooked turkey into the slow cooker during the last hour.
  • To freeze: Cool completely and freeze before adding the cream cheese and sour cream. Stir the dairy in after reheating.
  • Too thin? Mash more beans or uncover and cook on HIGH for 20 minutes.
