Ingredients 

  • 1 1/2 cups Fiber One Cereal
  • 1 cup buttermilk
  • 1/3 cup unsweetened applesauce
  • 1 large egg
  • 2/3 cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  • In a large mixing bowl, mix the cereal and buttermilk, let sit for about 20 minutes.
  • Then ina large mixing bowl, mix the wet mixture: Applesauce, egg, vanilla extract.
  • In another mixing bowl, mix the dry ingredients: Brown sugar, flour, baking powder, baking soda, and salt.
  • Mix the three mixtures.
  • Spray the muffin tins with non-stick cooking spray.
  • Pour the prepared batter into the muffin cavities, about 2/3 way full.
  • Set the muffin tin into the air fryer basket, and set the temperature to 320 degrees F for 12-15 minutes.
  • Place a toothpick in the center of a muffin, and if it comes out clean, it’s ready to be removed; otherwise, air fry for another couple of minutes.
  • Plate, serve, and enjoy!
