In a large mixing bowl, mix the cereal and buttermilk, let sit for about 20 minutes.
Then ina large mixing bowl, mix the wet mixture: Applesauce, egg, vanilla extract.
In another mixing bowl, mix the dry ingredients: Brown sugar, flour, baking powder, baking soda, and salt.
Mix the three mixtures.
Spray the muffin tins with non-stick cooking spray.
Pour the prepared batter into the muffin cavities, about 2/3 way full.
Set the muffin tin into the air fryer basket, and set the temperature to 320 degrees F for 12-15 minutes.
Place a toothpick in the center of a muffin, and if it comes out clean, it’s ready to be removed; otherwise, air fry for another couple of minutes.
