Preheat your air fryer to 375°F (190°C) for 3 minutes.
Pat chicken pieces dry and toss with olive oil or spray lightly with cooking spray.
Arrange chicken in a single layer in the air fryer basket. Cook for 10–12 minutes, shaking or flipping halfway through, until golden and cooked through (internal temperature 165°F).
While the chicken cooks, whisk together soy sauce, brown sugar, honey, rice vinegar, garlic, ginger, cornstarch, and water in a small saucepan. Heat over medium heat, stirring constantly until sauce thickens, about 3–4 minutes. Remove from heat and stir in sesame oil.
Toss the cooked chicken with the teriyaki sauce until evenly coated. Garnish with green onions and sesame seeds. Serve immediately over steamed rice or your favorite vegetables.
