Start by adding the shredded cabbage and one teaspoon of salt to a large bowl, and leave for a couple of minutes.
In another bowl, add the ground pork or chicken, mushrooms, chives, soy sauce, Hoisin sauce, sriracha sauce, minced garlic, and minced ginger. Mix well.
On a flat surface, add your potsticker wrapper, and add a tablespoon of filling into the center. Brush the sides with water, and then fold, using your hands to flatten the sides.
Set the potstickers into a greased air fryer basket, and spray with cooking spray. Set the temperature to 390 degrees F, and set cook time for 8-10 minutes, flipping halfway through the cooking process.
