In a bowl, combine 1 pound large shrimp,1 bell pepper, 1 cup snap peas, 1/2 onion, 2 cloves garlic, and 1 teaspoon fresh ginger with 1 tablespoon soy sauce, 1 teaspoon hoisin sauce and 1 teaspoon sesame oil. Let marinate for 10–15 minutes.
Preheat air fryer to 375°F (190°C). Lightly spray or brush the basket with oil.
Place shrimp in a single layer in the air fryer basket. Air fry for 5–6 minutes, shaking basket halfway through, until shrimp are pink and cooked through. Remove and set aside.
In a small bowl, whisk 1 tablespoon cornstarch and 1 tablespoon water to make a slurry. In a saucepan, combine 1/4 cup soy sauce 2 tablespoons hoisin sauce, 1 tablespoon oyster sauce, 1 tablespoon rice vinegar, 1 tablespoon honey , and 1 teaspoon sesame oil. Bring to simmer over medium heat. Stir in slurry and cook until thickened, about 1–2 minutes.
Add cooked shrimp to the skillet with vegetables. Pour sauce over and toss to coat evenly. Serve hot over steamed rice or noodles.
