Description

Ingredients 

  • 2 salmon fillets
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • In a bowl, combine the diced cherry tomatoes, chopped basil, and minced garlic. Season with salt and pepper to taste. Stir in the olive oil and set aside.
  • Preheat your air fryer to 400°F (200°C).
  • Season the salmon fillets with salt and pepper on both sides. Optionally, brush with a bit of olive oil to prevent sticking.
  • Place the salmon fillets in the air fryer basket, skin-side down. Air fry at 400°F for 8-10 minutes, or until the salmon flakes easily with a fork.
  • Once the salmon is cooked, place each fillet on a plate. Spoon the prepared tomato-basil mixture generously over the top of the salmon.
  • Drizzle balsamic glaze over the bruschetta topping for a tangy and sweet finish.
  • Serve immediately with your favorite side dish, like roasted vegetables or a light salad.
