Optional if wanting a wood flavoring: Place a scoop of food-grade wood pellets into the wood pellet burner of your Ninja Woodfire grill. Remember to not use any wood pellets that are not food-grade safe.
Turn on the Ninja Woodfire grill to the desired setting. For these pancakes the ‘grill‘ setting is recommended.
If using wood pellets, press the Woodfire Flavor Technology button. Next, set the heat to ‘Lo’ heat. Allow the Ninja Woodfire to Preheat. Be sure to not add food to the Ninja Woodfire until the display says ‘Add Food’.
While the Ninja Woodfire is preheating, prepare the pancake batter.
Begin by separating the egg yolks and egg whites.
Add The egg whites to a stand mixer or a medium-sized metal bowl.
Beat the egg whites with the stand mixer whisk attachment or by hand with a hand mixer. The egg whites are ready when there are white peaks that are stiff and not runny. Set the egg whites aside.
Stir the dry ingredients (flour, baking powder, granulated sugar, and sea salt) together in a medium to large bowl.
Slowly add the oil and whole milk to the dry ingredients while stirring to avoid any lumps.
Add the egg yolks and chocolate chips to the batter as well.
Fold the beaten egg whites carefully into the pancake batter. Be careful to not over mix or stir too quickly; however, fold the batter until you can no longer see white areas from the egg whites.
Allow the batter to rest for 10 minutes.
Scoop about ⅓ cup onto the prepared Ninja Woodfire. You can use the griddle attachment you can buy separately. Alternatively, non-stick grill mats also work well.
If using the Woodfire technology button, be sure to close the lid. Allow the pancakes to cook on the Woodfire until bubbly on one side. Flip and cook the pancakes until done.
Serve hot and enjoy!
