Ingredients
3poundbeef roast
1tablespoonground cumin
1tablespoongarlic powder
½tablespoonchili powder
2cupsbeef broth
7ouncesgreen chilis, diced
¼cuplime juice
Instructions
Add all of your ingredients to your Ninja Foodi instant pot. Give everything a quick stir to ensure the spices are evenly distributed.
Place the lid on your pressure cook and cook the roast on high pressure for 50 minutes. Let the pressure cooker naturally release for 10 minutes and then quickly release the rest of it.
Remove your roast from the pressure cooker and use two large forks to shred it. Add your shredded beef to a serving bowl along with about 1 cup of the juice from the pressure cooker.

Recipe Notes:
You can use pretty much any cut of roast for this recipe. We usually use a round roast, but feel free to use whatever you have on hand or available at your local grocery store.
We like to garnish our barbacoa beef with some chopped cilantro. You can also mix in some extra diced green chilis.
You can store your barbacoa beef in the fridge for up to 5 days in an airtight container. Reheat a plate of shredded beef in the microwave for about 1-1½ minutes. Stir your beef halfway through so it reheats evenly.
If you have fresh garlic then you can use two cloves of freshly minced garlic instead of garlic powder.
If you like a little more heat in your barbacoa then you can add a few drops of tabasco sauce to the shredded beef before serving it. You can also replace the chili powder with chipotle chili powder.
