Start by seasoning the halved chicken breasts with salt and pepper.
Drizzle them with olive oil, ensuring they are evenly coated. This helps to keep the chicken moist and adds flavor.
Cut four pieces of tin foil, large enough to fold over and seal the chicken and toppings.
Place a piece of chicken in the center of each foil piece.
Spoon pesto sauce over each chicken breast.
Top the chicken with halved cherry tomatoes and slices of fresh mozzarella.
Carefully fold the foil over the chicken and toppings, sealing the edges to create a packet. Make sure the packets are sealed well to keep the moisture in while cooking.
Preheat the air fryer to 390°F (200°C).
Place the foil packets in the air fryer basket. Depending on the size of your air fryer, you may need to cook them in batches.
Air fry for about 12-15 minutes, or until the chicken is cooked through and the cheese is melted.
Carefully open the foil packets (watch out for steam).
Sprinkle shredded parmesan and chopped basil over each serving for garnish.
Serve the packets either in the foil for a rustic presentation or transfer the contents to a plate.
