Description

Easy Air Fryer Eggplant Chips Recipe – Crispy, healthy, and quick to make, these air fryer eggplant chips are perfect for a guilt-free snack or appetizer.

Ingredients 

  • 2 small eggplants
  • 3/4 cup all-purpose flour
  • 3 large eggs, whisked
  • 1 cup breadcrumbs, Italian seasoned
  • 1/2 cup grated Parmesan cheese, or shredded Parmesan cheese

Instructions

  • Using a mandolin, slice the 2 small eggplants at 1/8” in thickness to create thin circles.
  • Combine the 1 cup breadcrumbs and 1/2 cup grated Parmesan cheese in a large bowl.
  • Dredge the eggplant slices in a bowl of 3/4 cup all-purpose flour, followed by a bowl containing the whisked 3 large eggs, lastly into a bowl of breadcrumbs with cheese.
  • Working in batches, lay the eggplant pieces into an air fryer basket and air fry at air fryer temperature of 375 degrees F and set cook time for 4-6 minutes.
  • Serve with your favorite dipping sauce.
