Instructions
Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.
In a large bowl, combine the rolled oats, cinnamon, and almonds. Stir to distribute evenly.
Melt the coconut oil and mix it with honey and brown sugar. Pour over the oat mixture and stir until everything is evenly coated. Add vanilla extract and mix again.
Spread the mixture evenly onto the prepared baking sheet. Bake for 20–25 minutes, stirring halfway through, until golden and fragrant.
Remove from the oven and let the granola cool completely on the baking sheet. This helps the clusters harden and achieve that perfect crunch.
Once the granola is fully cooled, gently fold in the cornflakes for extra crispiness.
Transfer to an airtight container. Enjoy with milk, yogurt, or as a snack anytime!
