Description

Make this Homemade Copycat Arby’s Chicken & Pecan Salad using air-fried chicken, crunchy pecans, crisp apples, and creamy dressing—perfect for sandwiches, wraps, or lettuce cups.

Ingredients 

  • 2 pieces boneless, skinless chicken breast
  • 1 teaspoon salt, for seasoning the chicken (To Taste)
  • 1/2 teaspoon black pepper, for seasoning the chicken (To Taste)
  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1 teaspoon salt, for dressing
  • 1/2 teaspoon black pepper, for dressing
  • 1/2 cup red apple, diced
  • 1/2 cup pecans, diced
  • 1/4 cup celery, diced
  • 1/4 cup grapes, diced

Instructions

  • Season the chicken with salt and pepper. Place in the air fryer basket in a single layer.
  • Set the air fryer temperature to 375 degrees F (190°C) and set cook time for 10-12 minutes, shaking halfway through, until golden brown and cooked through.
  • In a bowl, combine mayonnaise, lemon juice, salt, and pepper. Mix well until smooth.
  • In a large bowl, mix the air-fried chicken, diced apples, diced grapes, chopped pecans, and optional celery.
  • Pour the dressing over the salad ingredients and toss gently until everything is evenly coated.
  • Serve chilled on its own, in a sandwich, or over fresh greens.
