Ingredients 

  • 8 ounces gluten-free macaroni noodles
  • 1/2 cup gherkins, chopped fine
  • 1 large red bell pepper, chopped fine
  • 2 celery ribs, chopped fine
  • 1 small red onion, chopped fine
  • 2 large hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons white vinegar
  • 1/2 teaspoon pepper
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  • Boil the gluten-free macaroni noodles according to the package instructions. Drain and rinse under cold water to cool the pasta.
  • While the pasta cooks, chop the gherkins, red bell pepper, celery, red onion, and hard-boiled eggs into small pieces.
  • In a large mixing bowl, combine the mayonnaise, yellow mustard, white vinegar, pepper, sugar, salt, garlic powder, and onion powder. Stir until smooth and well combined.
  • Add the cooled pasta, chopped vegetables, and eggs into the bowl with the dressing. Toss until evenly coated.
  • Cover and refrigerate for at least an hour to allow the flavors to meld. Serve chilled and enjoy!
