Plug it in and let the waffle iron fully preheat so the waffles crisp instead of limp.
In a large bowl, whisk together1 1/2 cups All-purpose flour, 2 1/2 teaspoons Baking powder, 2 tablespoons Granulated sugar, and 1/2 teaspoon Salt.
In another bowl, whisk 2 large Eggs, 1 1/4 cups Water,1/4 cup Vegetable oil, and 1 teaspoon Vanilla extract until smooth.
Pour the wet mixture into the dry ingredients and stir just until combined. A few small lumps are fine — overmixing makes tough waffles.
Grease the waffle iron, by Lightly spray or brush with oil so nothing sticks..
Pour batter into the hot waffle iron, close the lid, and cook 4–6 minutes until golden and crisp.
Top with syrup, fruit, powdered sugar, or whatever makes your morning better.
